The best burrito place around Waco. The carne guisada is amazing and the tortillas are always fresh and homemade
Had given them 5 stars before but took 2 because of my most recent experience. Burritos getting more expensive but smaller and they fill the hot sauce like they don't make enough to give you enough. Also, told them little beans and rice but gave me more beans and rice with small amount of tongue. What's the point in ordering your way if they don't care to make it your way, smh. Aldo, no point in ordering ahead because they still won't start your order until you get there and pay. Can't pay over the phone either because they do cash only. No card payments.

Pablo’s Taqueria is a place worth going out of your way for. I live in Austin and have easy access to a lot of great Mexican eateries and I put Pablo’s Carne Guisado burritos at the top of my list for Carne Guisados. Stop by when your are passing through Waco, you won’t be disappointed!
The best burritos in the city. Get there quick it get busy around Lunch time
I've been eating from this place for over 2 decades now.... For a while I stopped because I moved but it's a must for me when I'm not eating at my parents'. Their dishes, like the cactus in a red sauce with pork meat has that unique homemade flavor that you'd get if you lived in Mexico. Their chicharrón is bomb and their pricing has been affordable considering a lot of factors. They do offer a sitting area but it's not the most pleasant, either because of the heat or cold. I wouldn't recommend you plan eating there. It's cash only so, for some that's an inconvenience... It is for me at times. Parking can be chaotic but expected because they are always busy.
Very good burritos! Pablo’s is a great place to have on deck for when you don’t want to make a homemade burrito. You will order at a walk-up window and have to wait in the elements of nature for your order. There will probably be a lot of people standing around because this place is just that good. You may not be able to tell who is waiting to order and who is waiting on an order, just ask someone, the community of customers are helpful and welcoming. If you want a bougie experience this is not it. There is a partially enclosed area near the back of the building where you can wait for your order and eat but then you’ll miss the people watching experience. 5 stars for food and original experience!
